3) Frosted Peppermint Cookies. This recipe is a little more complicated than the first two but you want a challenge than this is for you.

You will need:

-1⁄2 a cup of unsalted butter

-1 cup of chocolate chips

-2 oz of baking chocolate

-1 ¼ of flour

-1⁄2 teaspoon of baking powder

-½ a teaspoon of salt

-2 eggs and 1 egg yolk

-⅔ cup of brown sugar

-⅓ cup of granulated sugar

-1 teaspoon of vanilla extract

-1⁄4 teaspoon of peppermint extract

For the frosting you will need:

-4 oz of cream cheese

-4 tablespoons of unsalted butter

-1⁄2 teaspoon of peppermint extract

-2 cups of powdered sugar

-some crushed candy canes for topping

To start, you want to mix the chocolate chips and butter together and heat the mixture in the microwave until they melt, then let it cool down for about 30 minutes. Then whisk the flour, baking powder and salt together for 20 seconds. Thirdly, you need to mix the eggs, egg yolk, brown sugar and granulated sugar. After three minutes of mixing with an electric hand mixer on medium, you will need to put the vanilla extract and peppermint extract in. Then, mix that in with the chocolate mixture you made first. Use a wooden spoon to mix the second mixture in with the chocolate mixture, and once it’s combined you will need to chill the mixture until it is set. Preheat your oven to 350 degrees, and once the oven reaches 350 degrees you will need to take the dough out and shape it into balls, put them on the cookie sheet and bake for 8-11 minutes. Then to make the frosting you want to mix the cream cheese and butter until it’s fluffy. Then add the peppermint extract and powder sugar.
